Chocolate Chip Cookies : Gluten Free Recipe!
Do you have a friend or loved one who can’t have any gluten in their diet. This recipe for gluten free oatmeal chocolate chip cookies makes some of the best chocolate chip cookies I have eaten.
You will need:
- 1/3 cup rice flour
- 1/3 cup almond meal
- 1/3 cup sorghum flour
- 1/4 teaspoon xanthan gum
- 1/4 teaspoon salt
- 1 3/4 sticks butter
- 1 cup brown sugar
- 1 egg
- 1 tablespoon vanilla
- 2 1/2 cups certified gluten free oats
- 1 1/4 cups chocolate chips
The first thing you’ll want to do is preheat your oven to 350ºF.
Next, mix cream the butter and brown sugar. Add the egg and vanilla and mix well.
Mix together all of the flours, xanthan gum and salt. Add this to the wet ingredients in your mixer. Mix on a medium setting until the dough reaches a uniform consistency, then add in the oats and chocolate chips.
Spoon the dough into balls on a cookie sheet. They will spread out a bit while baking, so leave room between each chocolate chip cookie.
Cook for twelve to fifteen minutes until golden brown on top. This will produce chewy chocolate chip cookies that taste great.
