Meringue Cookie
Have you ever had really good meringues and wished you could make them yourself at home? This fabulous recipe for chocolate chip meringue cookie recipe makes that wish into a possibility!
You will need:
- 2 egg whites at room temperature
- 1 teaspoon apple cider vinegar
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sugar
- 6 oz chocolate chips
- 1 c broken nuts (optional)
First, preheat your oven to 250 degrees.
Next, beat together the egg whites, vinegar, salt and vanilla in a large bowl until foamy.
Gradually beat in the sugar sugar until the meringue makes stiff peaks.
Fold in the nuts and/or chocolate chips by hand. Then, drop large spoonfuls onto a greased cookie sheet.
Bake the meringues for forty minutes, then turn off the oven and leave the cookies inside for another forty minutes.
This recipe makes about four dozen cookies.
You can feel free to experiment with the addition of other flavors to make your entire family happy. You can add instant coffee granules to make coffee flavored meringues. Or you can add fresh raspberries for a sweet, summery treat. Oooh, maybe add cocoa powder for an extra chocolate burst! And hard mint candies, crushed and added to the meringue could give them a delightful, minty burst of flavor.
